White Sturgeon Caviar vs. Russian Sturgeon Caviar

White sturgeon caviar is said to have similar buttery undertones similar to Osetra (Russian) sturgeon caviar. However, the label "Osetra (Ossetra, Asetra, Oscietra)" is reserved for the Russian sturgeon in the way that "Black Angus" beef is reserved for meat coming from the exceptional breed of cattle bearing that name.
